RAJMA BIRYANI

Cooking time - 40mins

INGREDIENTS

  • Rajma - 1cup
  • Basmati rice - 1cup
  • Onion - 1
  • Tomato - 1
  • Ginger garlic paste - 1tsp
  • Green chilli - 2
  • Turmeric powder - 1/2tsp
  • Red chili powder - 1tsp
  • Coriander powder - 1tsp
  • Garam masala - 1tsp
  • Curd - 2-3tsp
  • Coriander and mint leaves -1/4cup
  • Lemon juice - 2tsp
  • Clove,cinnamon,bay leaf,cardamom,star anise,rose petals(1/4tsp)- 1(each)
  • Salt
  • Water
  • Oil and ghee- 2tsp
PREPARATION

  • Soak rajma overnight and cook and keep it aside. (cook rajma in the pressure cooker for 2-3whistles).
  • Soak basmati rice for 15 mins. (use rajma cooking water for soaking basmati rice).
  • In a pressure cooker add oil and ghee, clove, cinnamon, cardamom, star anise and rose petals.
  • Add onion, green chili and a half cup of coriander and mint leaves.
  • Once onion changes its color add ginger garlic paste and cook for 2mins.
  • Add tomato and salt.once tomato becomes mushy add red chilli powder, coriander powder, turmeric powder and garam masala.
  • Then add rajma and curd.cook until oil separates from the gravy. then add water and rice.check salt and spicy.
  • Pressure cook for 2 whistles.
  • Once the pressure is released add coriander leaves and mint leaves, ghee, and lemon juice and stir well.
