SPINACH RICE

Cooking time: 45 mins

INGREDIENTS
  • Spinach - 1and half cup
  • Basmati rice - 2cups
  • Bay leaf,cardamom,cinnamon,cloves - 1 
  • Fennel seeds - 1tsp
  • Cumin seeds - 1/2tsp
  • Onion - 1cup
  • Tomato -1
  • Ginger-garlic paste - 1tsp
  • Mint and coriander leaves
  • Green peas or potato - 1/2cup (optional)
  • Red chili powder - 1& half tsp
  • Coriander powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Salt
  • Oil and ghee
  • Lemon juice - 1tsp
  • Water -4 cups
PREPARATION
  • Soak basmati rice for 20 minutes
  • In a pressure cooker add oil, ghee, bay leaf, cardamom, cinnamon, cloves, cumin seeds, and fennel seeds.
  • Then add onion.once onion changes its color add ginger-garlic paste, mint and coriander leaves.
  • Then add tomato, turmeric powder, chili powder, coriander powder, and salt.
  • After 5 minutes add chopped spinach and cook well for another 5-7 minutes.
  • Add green peas or potato and add water.
  • Once the water started to boil add basmati rice and check the salt and cook for 2 whistles.
  • After pressure releases from the cooker add lemon juice and stir well.
