MINT PULAO

Cooking time : 45 mins

INGREDIENTS

  • Mint leaves - 1/2 cup
  • Coriander leaves - 1/2 cup
  • Green chilli - 4
  • Ginger garlic paste - 1 tsp
  • Onion - 1
  • Bay leaf, cinnamon,cardamom,cloves,star flower - 1 ( each)
  • Oil and ghee - 2 tsp
  • Fennel seeds - 1/2 tsp
  • Lemon juice - 1 tsp
  • Cashew nuts - 5
  • Potato or green peas - 1/2 cup ( optional )
  • Water 
  • Salt
  • Basmathi rice - 1 cup
PREPARATION

  • Soak basmathi rice for 1/2 hour .( for 1 cup rice 2 cups of water).
  • In a pressure cooker add 2 tsp of oil and ghee, bay leaf,cinnamon,cardamom,star flower , fennel seeds and cloves.
  • Add onion and cook for 5 mins and add ginger garlic paste.grind mint leaves,coriander leaves and green chilli in to fine thick paste by adding little water.
  • Add the grind paste and cook for 5 -7 mins.Add green peas or potato (optional).
  • Then add water and salt.
  • Once water started to boil add rice and pressure cook for 2 whistles.
  • Once pressure released add ghee and lemon juice.
  • Garnish with coriander and mint leaves.
