VEGETABLE STEW

Cooking time : 30 mins

INGREDIENTS

  • Clove - 2
  • Cinnamon -1
  • Cardamom - 2
  • Bay leaf  - 1
  • Curry leaves 
  • Green chilli - 2
  • Onion - 1
  • Ginger - 2 tsp
  • Vegetables - 1 and half cup ( carrot,beans,cauliflower,potato)
  • Pepper powder - 2 tsp
  • Thick coconut milk - 1/2 cup
  • Light coconut milk - 2 cup
  • Water
  • Coconut oil
  • Salt
  • Coriander leaves
PREPARATION

  • In a pan add coconut oil,clove,cinnamon,bay leaf and cardamom.
  • Then add onion,ginger,green chilli,curry leaves.
  • Once onion cooked well add vegetables and cook for 5 mins .
  • Add light coconut milk and 1 cup water.vegetables should cook in coconut milk.
  • Then add pepper powder and salt.once the vegetables cooked add thick coconut milk and cook for another 2 mins and off the stove.
  • Garnish with coriander leaves.
  • Eat with idiyappam and appam.
