- Brinjal - 250 gm
- Onion - 1/2 cup
- Green chilli -1
- Curry leaves - few
- Ginger garlic paste - 1 tsp
- Turmeric powder - 1/4 tsp
- Chilli powder - 1 and half tsp
- Tamarind - lemon size
- Coconut - 1/4 cup
- Water - 1 cup
- Salt
- Oil
- Coconut oil
- Soak tamarind in water for 10 mins.
- In a pan add 1/2 tsp of oil add coconut and saute till coconut changes its colour to golden brown.
- Grind the coconut in to paste by adding water.
- In a pan add oil , coconut oil, onion,green chilli and curry leaves.
- Once onion changes its colour add ginger garlic paste ,brinjal,turmeric powder,chilli powder and salt.
- After 10 mins add tamarind water and cook for another 5 mins.
- Lastly add coconut paste and little water cook for 5 mins .(off the stove once the oil separates from gravy).
- Side dish for biryani and variety rice.
