BRINJAL GRAVY

Cooking time : 30 mins

INGREDIENTS

  • Brinjal - 250 gm
  • Onion - 1/2 cup
  • Green chilli -1
  • Curry leaves - few
  • Ginger garlic paste - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Chilli powder - 1 and half tsp
  • Tamarind - lemon size
  • Coconut - 1/4 cup
  • Water - 1 cup
  • Salt 
  • Oil
  • Coconut oil
PREPARATION

  • Soak tamarind in water for 10 mins.
  • In a pan add 1/2 tsp of oil add coconut and saute till coconut changes its colour to golden brown.
  • Grind the coconut in to paste by adding water.
  • In a pan add oil , coconut oil, onion,green chilli and curry leaves.
  • Once onion changes its colour add ginger garlic paste ,brinjal,turmeric powder,chilli powder and salt.
  • After 10 mins add tamarind water and cook for another 5 mins.
  • Lastly add coconut paste and little water cook for 5 mins .(off the stove once the oil separates from gravy).
  • Side dish for biryani and variety rice.
