MUSHROOM PULAV


Cooking time: 30 mins

INGREDIENTS

  • Mushrooms - 1cup
  • Onion -1
  • Green chilli - 3
  • Mint leaves - 1/4cup
  • Coriander leaves - 1/4cup
  • Ginger garlic paste - 2tsp
  • Coconut milk - 3cups
  • Basmati rice - 2 cups
  • Ghee - 1tsp
  • Oil
  • Salt
  • Bay leaf,cardamom,cinnamon,cloves - 1 each
PREPARATION
  • Soak basmati rice in coconut milk for 10 mins.
  • In a pressure cooker add oil and ghee and add bay leaf, cardamom, cinnamon, cloves.
  • Then add onion  and add ginger garlic paste once the onion turns golden brown,
  • Add greenchillies.coriander leaves, mint leaves and saute for 2 mins.
  • Add mushrooms and cook for 2 mins then add coconut milk and water.
  • For 2 cups of rice add 4cups.(3cups coconut milk and 1 cup water).
  • Once the water started to boil add salt and rice and cook for 2 whistles.
  • Once it is done add little ghee and chopped coriander leaves and mint leaves.
  • Serve with cauliflower chilli or any fry.
  • Pulav will be in the flavour of mint and coconut milk.
