CAULIFLOWER RICE

Cooking time: 60 mins

INGREDIENTS

  • Cauliflower -100gms
  • Onion-1
  • Green chilli-2
  • Ginger garlic paste -2 spoon
  • Tomato - 1
  • Whole garam masala -1 spoon ( cinnamon -1, cardamom-1, cloves-1, bay leaf -1)
  • Cashew paste-2 tsp
  • Chilli powder -2tsp
  • Coriander powder -2tsp
  • Amchur powder-1tsp
  • Gram flour -2tsp
  • Curd -1tsp
  • Cumin powder -1tsp
  • Turmeric powder -1tsp
  • Garam masala -2tsp
  • Lemon juice -2tsp
  • Ghee - 1tsp
  • Oil - 2tsp
  • Salt
  • Water - 2cup
  • Basmati rice - 1 cup (200gms)
  • Coriander and mint leaves
PREPARATION

  • In a bowl add cleaned cauliflower (soaking in hot water for 10 mins), coriander powder, chilli powder,garam masala, gram flour, curd, lemon juice, amchur powder, cumin powder, ginger garlic paste, turmeric powder, oil, salt and mix well.
  • Marinate and keep it for 30 mins. after that in dosa pan add little oil and roast the cauliflowers or bake in the oven.
  • Take a pressure cooker and add oil and ghee and add all whole garam masala spices, onions, ginger garlic paste, green chilli.
  • Once the raw smell of ginger garlic smell goes add cashew paste and tomato and add roasted cauliflower and cook for 5 mins.
  • Then add soaked basmati rice and water, coriander and mint leaves.
  • Pressure cook for 2 whistles.
  • Once it is done add little ghee, lemon juice and coriander leaves and serve with onion raitha.
  • Instead of cauliflower, we can add broccoli also.
